May For Me-Day 2


CROCKPOT CHERRY COLA CHOCOLATE CAKE

Cake Ingredients:
1/2 cup cola
1/2 cup dried tart cherries
1-1/2 cups all purpose flour
1/2 cup sugar
2 ounces semisweet chocolate- chopped
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup chocolate milk
1/2 cup butter - melted
2 teaspoons vanilla extract

Topping Ingredients:
1-1/4 cups cola
1/2 cup sugar
1/2 cup packed brown sugar
2 ounces semisweet chocolate - chopped
1/4 cup dark rum (I used 2 teaspoons of rum extract)


Step One:
In a small saucepan - bring cola and dried cherries to a boil. Remove from heat and let stand for 30 minutes.

Step Two:
In a large bowl - combine flour, sugar, chocolate, baking powder and salt.

Step Three:
In seperate bowl - combine melted butter (I microwaved), chocolate milk and vanilla.

Step Four:
(topping) In small saucepan, combine cola, sugar and brown sugar. Cook and stir until sugar is dissolved. Remove from heat, sir in chocolate and rum - stir until chocolate is melted and mixture is smooth.


Step Five:
Slowly add wet ingredients into the dry ingredients, folding just to moistened. Fold in cherry mixture. Spray crockpot with cooking spray or coat with butter. Carefully pour in batter, preventing anything on sides or top.


Step Five:
Carefully pour topping mixture on top of cake batter - do not stir. Cover crockpot, set on high, and cook for 2 to 2-1/2 hrs. or until inserted knive come comes out clean. (mine took about 2hrs. 15 mins.) Turn off and let sit for 30 minutes.


This will still be very hot!! AND not a good idea to flip onto a cake plate as the topping sets to the bottom and you get a nice 'plop' of hot goo!! Best to serve from the crockpot. A little vanilla ice cream, or some whipped cream with some favorite toppings. Doesn't look pleasant, but let me tell you - yummo!! And I was very pleased with myself - I am so not the baker. ** this recipe was in the little cookbook that came with my crockpot**

Oooh that cake looks really yummy. And figures I am missing an ingredient that's a fairly important one. :(
I wonder what would happen if you used a Diet Cherry Cola in this recipe. hmmmmmm might not work though as it probably relies ont he sugars in the cola to work correctly. Gosh, I'd hate to wait that long for a yummy dessert only to find that diet cola doesn't work. LOL

No buttons for me today. Guess hubby's shirts are safe for one more day. haha

This looks delicious! I don't have any dried cherries on hand, but I do have dried cranberries. I'm guessing those would work and I know what I'm making later tonight! Thanks for sharing the recipe.

Oooh, I've got to give this a try! I love things I can cook in my crockpot - it avoids that end of the day rush when I'm trying to finish up a project but need to cook dinner! Whoop whoop!!
