May For Me


This is the 4th year for May For Me and I have several surprises thru the month as May is my Birthday Month!  Please be sure to visit Marcia for all the goodies she will be sharing, too.  And please, join us in this wonderful event and share some of your ME with us and use Marcia's linky parties, too.



 Part of my ME time is working on a project for me.  I haven't used my Asian fabrics since a project back when I first started quilting and before blogging - so no photo of that piece.  Now the mystery is, I went in search of my Asian stash to help out another blogger - it is missing!  But in my recent re-organizing I did find this piece of Kona Bay mixed in with my juvenile panels.  This is also my Let's Book It project because I had my memory jogged by another blogger who participated last month with one of her 'print and keep in a folder' projects.  I have 3 large binders of such things and I remembered something I had wanted to make LONG AGO.

Part of my re-habbing from the broken hip was some dietary assessment to help mend and make new bone - a high protein diet.  Now I don't eat a lot of meat (which they kept trying to convince me was the best protein) and a lot of things they suggested just are not things I like to eat.  But I thought I could squeeze an egg a day into my meal plan - still not a favorite food.

Recipe:  Biscuit Egg Cup

Ingredients:
1lb. bacon
1/2 cup finely chopped onion
1 can (16.3 oz) Pillsbury Grands refrigerated buttermilk biscuits
8 eggs
1/2 cup shredded cheese (mix, smokey,cheddar-your choice)

Step 1 
Heat oven to 350F to warm.  In skillet, cook bacon until crispy; remove from pan to paper towels and crumble.  Remove all but 1 0r 2 TSP of bacon drippings from skillet and add chopped onions; cook until tender.  In small bowl, mix onion and bacon.  Set aside.

Step 2
Using muffin cup pan; grease 8 cups.  Seperate dough into 8 biscuits; place 1 in each muffin cup and press into bottom and 3/4 up sides of cups.  Divide bacon/onion mixture evenly among the biscuit cups; crack one egg into each cup.  Top with cheese.

Step 3
Bake 30 minutes or until eggs are firm.  Run small knife around cups to loosen.  Serves 8 (or 4 hungry or 1 very hungry grown son)

**these can be made ahead of time - keep covered and in refrigerator.  When ready to serve, reheat in 350F oven for about 5 minutes.** 

Don't want the bacon - try some frozen chopped spinach (thawed and drained) or mushrooms. Try the flaky or cornmeal biscuits for a different flavor.

Happy birthday sometime this month :) I love a fried egg sandwich on brown toast for breakfast. I haven't had one for a few weeks because we were out of eggs but I think I will have one tomorrow.

Happy Birthday, Sharon. Always enjoy your b-day month. I hope you find your Asian stash soon. I've lost some of my stash a few times, too. I always find it in a box under other fabric. ugh.
I usually have yogurt, fruit and chocolate milk for breakfast. Sometimes I have a scrambled egg biscuit : )

Happy Birthday! I love omlettes with pepperjack cheese and sausage and fresh fruit for breakfast. Fortunately, I don't eat this way every morning, but I would love to.

Happy birthday month - I hope you enjoy it!! Breakfast for me is gluten free crispbread with butter and vegemite! But sometimes I have a bowl of banana, strawberries, blueberries and pineapple! Special treat and YUM!!

Happy Birthday month Sharon. My favourite breakfast is croissant and hot chocolate. I like the croissant warmed and with raspberry jam and if my husband makes breakfast and brings it to me in bed I am in heaven.

Sharon, I am so sorry to read about your broken hip! I usually grab a bowl of Great Grains cereal with some almond milk for breakfast. Do you like cheeses? You don't have to eat breakfast foods for breakfast - you might enjoy a grilled cheese sandwich, or a salad with cold cuts and cheeses added!

You really don't like eggs? Eggs are my absolute favorite food. But, I don't eat them for breakfast. For a very long time my breakfast has been a big glass of chocolate milk! Happy coming up birthday!

Love having a buttered toasted bagel and fresh fruit. Of course, every once in a while we splurge (calorie/fat wise) and have eggs benedict...not too often though since I like having my arteries unclogged...LOL!!

I have been trying to eat less meat & still try to get enough protein as well. Your egg cups look easy! My favorite breakfast is oatmeal and if I'm gonna be honest - bacon :) May is my birthday month too! Yay for May babies!!

Happy May B-Day! Glad you are continuing to heal.... it can be a long road. I'm not a meat eater either, but I do enjoy eggs. That looks like a great recipe. Normally, I'm a cold cereal eater in the summer, oatmeal in the winter. Thanks so much for this wonderful giveaway... I love this fabric!

I have quite a number of oriental fabrics so I will definitely check that site out.

As for a breakfast food I guess I would have to say that my favorite is pancakes.

Whenever DH & I eat out I almost always get the pancakes & eggs combo. The funny thing is that I do not make pancakes at home --- only eat them out.

What a great laugh I had looking at the recipe. Looking at the picture of 1 biscuit my brain made the recipe for one serving. Any recipe that starts with a pound of bacon is wonderful. Maybe not exactly what your doctor had in mind. A duh moment, but fun.
My favorite breakfast food is Pork Roll and American Cheese on a Kaiser Roll. It's a Jersey thing.

What lovely fabric you are giving away Sharon! Of course I'd love to win :) My favorite breakfast is Pecan Waffles at a delightful Pancake House in Gatlinburg Tennessee. They even give you warm pecan syrup - YUM!!!!! At home, my husband and I always make eggs and bacon - one of our "togetherness" rituals that always makes me feel at peace with my world :)

As for my FAVORITE breakfast food, it is made from scratch biscuits and good old can milk gravy.. yum yum.. I was raised on this.. Do I eat it often? no but I still have a yeaning for it..

I bake a wicked bran, flax, whole wheat muffin...that I eat for breakfast almost every day! (They also have nuts, cranberries, carrots and dark chocolate chips!) Yum. So glad your hip is feeling better!! Thanks for sharing the May for Me linky...I had fun creating my post.

Happy May Birthday!! and thanks for the giveaway! My fav B-fast is similar to yours. At our house, we start with a slice or two of ham, press down in a lightly greased muffin pan. Then we add the beaten egg, onions and green pepper mixture. Sprinkle pepper and cheese and bake. Voilà! Breakfast is served. Enjoy!

I absolutely love Eggs Benedict. I save them for a special occasion only and have the 15 minute oatmeal for every day breakfast. Much healthier.

I have recently return to health and exercise. A few years ago a trainer mentioned this and I am back to enjoying this in the morning! A Protein Pancake-In a blender a 1/2 cup of Old Fashion Oatmeal, 4 egg whites and a dash of vanilla and a sweetener (your choice), and sugar-free syrup. This meal stays with you for hours. Love It!

My favorite is something sweet. I have a really old coffee cake recipe that I love. It is not very sweet but is quick and easy to make.
