Hands2Help Update

Since I have signed up for two quilts, I decided to get started on the first quilt.  My snack barrel holding 2" squares was just stuffed full - so of course I know there is enough for a postage stamp quilt.

A 12 x 12 setting for a 18.5" block - then a 3 x 4 block setting for a 55.5" x 74"  quilt top - I may have to play around with this to get the correct size for the charity requirements.

My second quilt will be a real quick pattern from MaryQuilts - the 'Boxed Squares'.  Love that it uses an entire Jelly Roll - only waste is the selvedge and fold.  There are quite a few quick patterns on her list which might inspire your H2H quilt.

AND A RECIPE

Crock Pot Salsa Chicken

2 chicken breasts, fresh or frozen
1 (24 oz.) jar salsa
1 (15 oz.) can black beans, drained & rinsed (or about 2 cups cooked, dry beans)
1 (8 oz.) bag frozen corn

Spray crock pot with nonstick spray. (or use a crock pot liner). Place chicken breast at the bottom of the crock pot. Pour salsa, beans, and corn on top of the chicken breast. Cover and cook on High for about 2 hours- check chicken.  Lower heat setting. When the chicken is fully cooked, shred it with two forks and stir everything together. **when using frozen chicken I have left on the HIGH setting for 4 hours and I have used 4 chicken breasts with the same amount of ingredients**

This can be served in a bowl, over tortillas or in a flour tortilla with sour cream and shredded cheese.

For a more 'soup' like chicken - add 1 can cream soup(chicken, mushroom, celery).  Also, you can change the flavor with a fruit salsa - peach, mango, pineapple. And serve over rice or pasta. ** you can even swap out the chicken for beef or pork**

Too bad your snack barrel isn't full of chocolate. The post stamp quilt will be awesome. The recipe sounds wonderful. I will have to try it.

Love that postage stamp quilt. My favourite quilts are scrappy like that. They are so warm and comforting. And I've made a similar chicken recipe before and served over rice. Delicious!

Oh look at that postage stamp. I bet I have enough scraps to do one of those. So do you cut the scraps as you go? Or get the scraps together and do a whole lot of cutting. I need to do something with my scraps. Just not sure what.

And thanks for the recipe, that's a keeper. I've got that one on the list for next week :)
