May For Me


May Day on May 1 is an ancient Spring Festival and it is also a traditional spring holiday in many cultures.  Traditional May Day rites and celebrations include dancing, crowning a May Queen and celebrations involving a maypole.

Well I didn't dance around any May Poles, but we had another lovely day so there was some ME time to just take a walk outdoors and enjoy the weather. Oh, and Stewarts is having their Ice Cream Sale Week, so my SIL and I HAD to go stock up on ice cream - will be great for some other ME moments (wink).

RECIPE

Did you know that May is also National Strawberry Month?  So I have a 5-minute ME strawberry desert.


Desert Nachos

  • Packaged plain Nachos - I like the cinnamon/sugar nacho strips (or make your own by taking 3-4 soft tortillas, sprinkle with cinnamon/sugar, warm in oven then cut into pieces) 
  • 1 1/5 cups strawberries hulled and chopped coursely (or frozen, thawed); sprinkle with 1 1/5 Tsp of sugar and toss to coat
  • 8 oz. Vanilla Yogurt
  • 1/2 cup shred coconut 

line bowl with Nachos, serving of yogurt , add some strawberries and top with coconut 
Option - frozen yogurt or ice cream and shaved chocolate

I would never think of using corn chips (that's what we call them in Australia) for a dessert. Sounds very interesting.
