May For Me - Day 16
PEPPERRONI MINI MUFFINS
Ingredients:
MUFFIN CRUST
1 1/2 cups all-purpose flour
1/2 cup fine yellow cornmeal
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, lightly beaten
1 1/4 cups milk
1/4 cup vegetable oil
(or the non-baker me - used 2 boxes of corn muffin mix)
TOPPING
1/2 cup marinara sauce
1/2 cup grated Parmesan cheese
1/2 cup finely chopped pepperoni
Pre-heat the oven to 400ยบ and prep mini muffin cup pan by greasing lightly and sprinkle with flour (paper liners seem to stick to the muffins).
Sift the flour, cornmeal, sugar, baking powder, and salt into a large mixing bowl. In a separate bowl, blend the egg, milk, and vegetable oil. Make a well in the dry mixture and add the liquid. Stir the batter until smooth.
In a small bowl, blend the marinara sauce and Parmesan cheese; set aside. Spoon the batter into the muffin cups, filling them about three quarters full. Spoon about 1/2 teaspoon of the sauce-and-cheese mixture on top of each one, pushing it in slightly, then sprinkle with chopped pepperoni.
Bake the muffins for 15 minutes; they'll puff up and brown slightly around the upper edge. Cool in the pan for several minutes, then remove from the pan and eat warm. Makes about 36 mini muffins. **you can make full size muffins, but recommend no papers as the corn meal sticks - and they may need more bake time**

Only one word matched today but that's great since it had been approx. 6 days since I had the last one.
But, the recipe looks really yummy. Thank you. I just sent this to my son who is in law school two states away. It looks like a great recipe for a college student to make a bunch and stick into the freezer and then have them when the big study all nighters hit instead of eating fast food.
